Ingredients:
For the crust
- 1 cup flour
- ¼ cup granulated sweetener
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup butter
For the lemon filling
- 3 Tablespoons flour
- 1 cup granulated sweetener
- 3 eggs
- ½ cup lemon juice
- ¼ Cup icing sugar
Let's do it!
- Preheat the oven to 170C/ Cover the pan with parchment paper and set aside.
- Place all the crust ingredients in a bowl and stir. Transfer to the pan and press until the mass is almost uniform. Place in the oven and bake for 20-22 minutes or until just starting to turn golden.
- While it bakes, prepare the filling. Put the flour and sweetener in a mixing bowl. Add the eggs and lemon juice and beat until smooth.
- Pour the lemon filling over the prebaked crust and distribute evenly. Return to oven for 23-25 minutes or until filling sets.
- Remove the lemon bars from the oven and allow to cool completely. Once cooled, sift the icing sugar on top. Chill the bars to harden before cutting them into bars.
