Harvesting is one of the most important processes. Usually, the harvest date is so important that a party is organized to celebrate this momentous occasion. The grape harvest usually begins 30 to 70 days after fruit set, when the fruit turns from green to yellow (for white varieties) or burgundy (for red varieties). At this stage there is usually an increase in sugar content.
This 2023 we started our harvest in the month of February; however, determining the right time to harvest the grapes is not easy. The environmental conditions, the type of soil, the location and the cultivation methods are decisive for the quality of the final product. We harvest different varieties at different stages of maturity to achieve the desired quality characteristics to guarantee the best pisco.
For this reason, during the final stages of maturation, from the beginning of maturation to the change of color, daily monitoring is carried out together with the inspection of the grapes to avoid possible damage; Likewise, we measure the Brix degrees to determine the natural sugar content in the grape.
Hand picked grapes
Our grapes are harvested by hand, cutting the bunches with scissors. After cutting the entire bunch, the workers place it in a collection basket and transfer it to the bodega where it goes through the destemming machine, then the peels are macerated for a few hours and the juice is separated to later be fermented and distilled becoming pisco, which is stored in stainless steel tanks, respecting the regulatory times of our winery
